Yields 10 servings
For the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Cocktail (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Syrup: Place the listed ingredients inside a saucepan, heat until it reaches a light boil, stirring so the sugar melts. Next, turn off the heat allowing it to reach room temperature completely. Transfer into an sealable bottle, cap it keeping it chilled, where it will keep for about a month.
To make Batch Mix: Pour every spirits and syrup in a big jug, let it rest for one hour, then filter it preferably using muslin, so it's completely strained.
When ready to serve: Measure 85ml from the cocktail base into your stirring glass packed with ice, and stir carefully for a minute to cool it down. Filter to a chilled martini glass or a similar vessel, garnish with the cranberries and finish using a light spray of mandarin oil over the top.
